Hello, Yao here, founder of 50Hertz. I would like to introduce you to a new málà condiment on the market: Wild Mushroom Chunky Chili Sauce (gluten-free) . This is the first non-50Hertz product on our website. Why this one? Because this is hands down my personal favorite málà sauce in this crowded market. This product is distinctly different from all the other chili oil and chili crisp in these fronts:
- The Shiitake and wild Porcini mushrooms in the jar are thick, chewy and true to its name, chunky. They are harvested from the high mountains of Yunnan province.
- Not irritatingly hot but with enough heat and tingle to make your salivate wildly and enliven any dishes: pasta, noodles, rice, fried eggs.
- Umami umami umami! Each bite into the mushroom and the fermented beans is like detonating a umami bomb in your mouth.
Flavors aside, the founder story of "Hotpot Queen" is also close to my heart. Who is the Hotpot Queen, you may ask? Her name is Ms. He Yongzhi who first opened her hole-in-wall hot pot restaurant Little Swan (Xiao Tian'e 小天鹅) with three tables in 1982 in my hometown Chongqing, the birthplace of hot pot. She then grew Little Swan into a household name and one of the most esteemed hotpot chains in China. She even invented the iconic Yin-Yang hot pot.
I grew up eating Little Swan's hotpot. I have fond memories of going to Little Swan with my family only on special occasions because unlike most other hotpot restaurants, Little Swan stands out for taste, ambience, service and higher price, despite its humble origin.
Now the woman behind Hotpot Queen is Jia, Ms. He's daughter. She founded the brand to pay homage to her mother and to bring the best Chongqing flavors to the world. When she reached out to me a few months ago, we immediately hit it off. She is a very Chongqing woman! Friendly, straightforward, hardworking. We found out we even went to the same middle school.
