2. It’s not a pepper at all. Sichuan pepper comes from the citrus family.
3. They’re not peppercorns. What you see are the dried husks of the Sichuan pepper berry — not the black seeds inside.
4. Not only from Sichuan. This plant grows across many regions of China and Asia.
5. The real name is “flower pepper.” That’s the literal translation of its Chinese name, huā jiāo (花椒).
The spice combination is wonderful. I have already used it to flavor meats and a variety of roasted vegetables.
The tingly blend has just the right amount of salt, heat, and tingle for a variety of uses. I really enjoy the citrus and anise notes as well, providing layers of flavor from this single spice blend. Delicious!
