This is our fun variety! With a bright and citrusy lime aroma, and a shade of yellow-green, this variety is a little different from other green varieties.

Red Sichuan Pepper: Han Yuan 汉源 variety

Locations: Western Sichuan

This is one funky variety! Darker red in color, but with an orangey, funky floral aroma. This is definitely the most iconic in Sichuan cooking

Red Sichuan Pepper: Da Hong Pao (Big Red Gown) 大红袍 variety

Found in: Gansu, Northern Sichuan

Our prettiest variety! It has a woodsy floral aroma, is plump, with a beautiful red flower petal shape.

STEP 2: THEY DEXTEROUSLY PICK THEM WHILE TRYING TO AVOID LARGE THORNS

STEP 3: AFTER PICKING THE SICHUAN PEPPER, WE NEED TO REMOVE IMPURITIES

STEP 4: BESIDES PICKING OUT TWIGS, WE NEED TO DRY IT SO THAT THE BLACK SEED FALLS OUT. IT IS UNPLEASANT TO EAT!

STEP 5: PEPPERS USED FOR OUR OIL INFUSIONS ARE PRESERVED IN OUR COLD ROOM TO RETAIN ITS FRESHNESS!
