Red vs. Green Sichuan Pepper: Many people are unaware that Sichuan pepper comes in two varieties - Red and Green. They are not in different stages of maturity but two plants with distinct flavors (think of red wine grapes and white wine grapes). Both are native to Sichuan, and while the red ones have been used in cooking for thousands of years, the green variety is more boutique and has only become popular in China in the past 20 years. You can compare and contrast them yourself by buying both oils in our 2-bottle pack.

Unrivalled Quality of Sichuan Pepper

While dried Sichuan (Szechuan) peppercorns offer remarkable flavors, they must be ground and prepared, with a possibility that coarse fragments give an unpleasant mouth feel. Sichuan pepper oil on the other hand is more convenient to use and preserves the flavor and potency much longer. It is not another hot sauce. In fact, it is not hot at all. The floral bouquet flavor stimulates your palate and nose, while the unique tingling sensation stimulates your tongue and lips. Best as a condiment over pasta, ramen noodles, pizza and salads. A few drops go a long way.

Freshest Product Shipped by Air

We airlift the oils right after the annual harvest in July and August directly from selected farms in the mountains of the Chongqing and Sichuan region. Airlifting helps ensure they are the freshest products outside of China.

Direct Sourcing from Farmers

Sichuan peppers are handpicked as automation has not arrived. While avoiding the thorns, farmers need to work carefully to preserve the peppers and keep them intact. This also reduces the presence of stalks and leaves, ensuring better flavor. Handpicking requires a dexterous, attentive and experienced labor force - notice the sharp thorns on the branches in this short clip.

futuristic food

I tried these with some lao gan ma stir-fry noodles and Brian David Gilbert's pepcorn recipe, and both enhanced these already delightful dishes a great deal. I feel like I'm creating new dishes that they'd serve at the Star Wars themepark or something. Wonderful!

I can't tell which one I like better!!!

I fell in love with the green sichuan oil right away, the aroma and flavors did so much to elevate many simple dishes. I like it mostly with noodles but I've also put it on eggs and I've even been known to dip potato chips in it. I love its flavor it's very distinctive and highly aromatic. I don't think it would go with just anything it seems best suited for things that are mild comfort food types. I just got the red oil and this is a serious game changer for me! it has all the tingle and pizzazz that I love in the green but the flavor is much more muted. While still aromatic and flavorful it seems perfectly well suited to play second fiddle off more flavorful dishes. I think it pairs really well with tomatoes sauces. My favorite dish to put it on is spaghetti squash Bolognese. I've also put it on pizza and I can imagine it will be a good addition to any hearty spicy dish. They asked if I was team red or team green and I have to say I'm team both!

Unlike Anything Else

I purchased several gift packs for others after having tasted each flavor myself. The oils are unique tasting and versatile. Love and use them (sparingly) on many dishes but find they go best with chicken and vegetables.
