Our elegantly designed gift pack contains one jar of green and one jar of red dried Sichuan peppers, accompanied by our informational insert card which tells the stories of our brand and the less known facts about Sichuan pepper. Usage: When cooking, crush with a pestle, then lightly fry in oil or butter, and add to stir-fry, soup, stew, or baking recipes. When serving, grind directly on to foods as with black peppercorns. The green goes particularly well with fish and seafood while the red with tofu and red meat . 

Storage: Keep in a cool and dry place or refrigerate to prolong life and aroma

With its bright color, floral aroma, potent taste, and lack of black seeds, it is the crème de la crème of the latest harvest. Our green Sichuan peppers has the highest flavor content among all varieties (notice the plump oil bumps on the shell) while our red ones use the most premium Da Hong Pao (Big Red Gown) variety. Only this variety shows this dazzling flower petal shape as you can see in the photos. They are hand-picked by farmers in Sichuan and Gansu province. 

Sichuan pepper, formerly known as Szechuan peppercorns, is unique for its dazzling aroma and electrifying tingling sensation. Unlike chili peppers with New World origins, the red Sichuan pepper is indigenous to China and has been used in cooking for centuries, defining iconic dishes such as Mapo Tofu and Kung Pao Chicken.

Sichuan pepper is really a member of the citrus prickly ash family. Unlike black peppercorns, the numbing ingredients like hydroxy-alpha sanshool are concentrated in the SHELL, not the SEED. Fresh peppers have to be handpicked as automation hasn't arrived, and then gently dried so that the shell can split open and the black, bitter seed can fall out.

Best Huajiao Outside of Sichuan

Until I tried your peppercorns I didn’t think it was possible to have the real deal outside of Sichuan. The huajiao available in the US was always substandard, tasteless and frustrating—just enough flavor to remind me of the real thing, but never enough. I tried 50 Hertz on a recommendation and it was incredible. Really. Every Sichuan restaurant needs a 50 Hertz upgrade! Thanks!

Better than average but still a long way to go

I suppose these are the best Sichuan Peppercorns I have gotten in the US, so I shouldnt be so harsh; but they pale in comparison to the freshly dried stuff in Sichuan. It's really night and day.

So yes, these are better than the year old junk on the racks at your average Chinese grocer; but that isnt saying much.

We are proud of our dried Sichuan peppers as there are almost no blackseeds in the jar. Also, as we've air shipped everything to the US, the Sichuan pepper arrives within the week.

One possibility for your disappointment is that, for the red Sichuan peppers, we used the Da Hong Pao variety (from southern Gansu province), which has a bright color, beautiful flower petal shape, and woodsy aroma. Compared to the Han Yuan variety (from western Sichuan), it is indeed less numbing or potent. Since this is our first foray into dried peppers and Sichuan pepper is still rather niche, we wanted to introduce varieties that are easier to accept and aesthetically appealing. A Sichuan pepper veteran like yourself might want something even stronger. We have Han Yuan variety available as well but only in the 1LB packaging. We would love to chat more if you have further suggestions for us as we love to keep the Sichuan pepper conversation going!
