Red vs. Green Sichuan Pepper: Many people are unaware that Sichuan pepper comes in two varieties - Red and Green. They are not in different stages of maturity but two plants with distinct flavors (think of red wine grapes and white wine grapes). Both are native to Sichuan, and while the red ones have been used in cooking for thousands of years, the green variety is more boutique and has only become popular in China in the past 20 years. You can compare and contrast them yourself by buying both oils in our 2-bottle pack.

 Direct Sourcing from Farmers

Sichuan peppers are handpicked as automation has not arrived. While avoiding the thorns, farmers need to work carefully to preserve the peppers and keep them intact. This also reduces the presence of stalks and leaves, ensuring better flavor. Handpicking requires a dexterous, attentive and experienced labor force - notice the sharp thorns on the branches in this short clip.

One of the key quality factors of Sichuan pepper oil is the quality of the base oil. We use premium non-GMO cold-pressed rapeseed oil. No preservatives, no allergy-causing soybean oil.

A Delightful Change!

I took notice of 50Hertz Sichuan Pepper from an article in The Guardian. After ordering, I also found them easy to communicate with, a handy thing since I "overused" the product first and didn't get to enjoy it. Since learning that a little goes a long way, it is wonderful to notice the subtle flavors along with the "tingly", and I have used it in many different ways, even to enhance something that is already flavored but boring. This brings life to it all! Order and enjoy. You will find yourself becoming creative and winning converts! Definitely NOT HOT, just as they say, so if you don't like spicy hot do not worry.
