Tingly Hot Sausage Sichuan Sliders

Nothing brings people together like firing up the grill.

If you're looking to change things up from the usual burgers, these pork sliders are an easy place to start. Chef Doug seasons ground pork with freshly ground red Sichuan pepper, fennel, black pepper, and a few pantry spices to create juicy, flavour-packed patties with a bright citrus aroma and a gentle tingle.

Grilled onions and sweet red peppers add a smoky finish, while toasted brioche rolls bring everything together. Whether you're cooking for a backyard barbecue, game day, or a casual weeknight dinner, these sliders are guaranteed to disappear fast.

Tingly Hot Sausage Sliders

Juicy grilled pork sliders seasoned with red Sichuan pepper and topped with charred onions and peppers.

Serves: 4 (8 sliders)

Ingredients

For the Spiced Pork

  • 16 oz ground pork (80/20)
  • 1 tsp 50Hertz Whole Red Sichuan Pepper, freshly ground
  • 1 tsp sugar
  • 1 tsp ground fennel seed
  • 1 tsp crushed red pepper flakes
  • 1 tsp freshly ground black pepper, plus more for the vegetables
  • ½ tsp granulated garlic
  • ½ tsp cayenne pepper
  • ½ tsp salt, plus more for the vegetables
  • ¼ tsp monosodium glutamate (MSG)

For the Sliders

  • 1 red onion, peeled
  • 1 red bell pepper
  • Olive oil
  • 8 brioche slider rolls

Method

Step 1: Prepare the Pork

Remove the pork from the refrigerator 20 minutes before grilling.

In a small bowl, combine the red Sichuan pepper, sugar, fennel seed, crushed red pepper flakes, black pepper, granulated garlic, cayenne pepper, salt, and MSG.

Add the spice mixture to the pork and mix well using two forks or clean hands.

Form the pork into eight 2-ounce patties and set aside.

Step 2: Grill the Vegetables

Cut the onion into wedges, leaving the root end intact.

Slice the bell pepper into large strips.

Coat the onion and pepper with olive oil and season with salt and black pepper.

Grill until softened and lightly charred around the edges.

When cool enough to handle, slice into smaller strips and set aside.

Step 3: Grill the Sliders

Grill the pork patties for 2–3 minutes per side, or until fully cooked.

Transfer to a plate and let them rest.

Step 4: Toast the Rolls

Slice the brioche slider rolls in half.

Place the cut sides on the grill for about 30 seconds, or until lightly toasted.

Step 5: Assemble

Place a pork patty on each toasted roll and top with the grilled onions and peppers.

Serve immediately and enjoy.
